Quinoa and Black Bean Salad


This Quinoa and Black Bean Salad is a refreshing and nutritious dish perfect for lunch or dinner. Packed with protein and fiber, it’s not only healthy but also quick to prepare.


  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/4 cup chopped cilantro
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp cumin
  • Salt and pepper to taste


  1. Rinse quinoa under cold water. In a pot, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes. Let it cool.
  2. In a large bowl, mix the cooked quinoa, black beans, corn, red bell pepper, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Pour the dressing over the quinoa mixture and toss to combine. Serve chilled.
