This incredible dish is pure happiness! Shrimp scampi with pasta will easily become a new favorite weeknight meal.
Ingredients:
- 1 (16 oz) package linguine pasta.
- 2 tbsp butter.
- 2 tbsp extra-virgin olive oil.
- 2 shallots, finely diced.
- 2 cloves garlic, minced.
- 1 pinch red pepper flakes (optional).
- 1 lb shrimp, peeled and deveined.
- 1 pinch kosher salt and freshly ground pepper.
- ½ c dry white wine.
- 1 lemon, juiced.
- 2 tbsp butter.
- 2 tbsp extra-virgin olive oil.
- ¼ c finely chopped fresh parsley leaves.
- 1 tsp extra-virgin olive oil, or to taste.
Directions:
- Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
- Add the linguine and cook for about 8 minutes or until al dente. Drain and rinse with cold water to stop the cooking process.
- Place a large skillet on the stove and turn the heat to medium.
- Add 2 tablespoons of olive oil and 2 tablespoons of butter, then allow it to become hot and melt.
- Add the garlic, shallots, and red pepper flakes. Cook for 3 minutes or until translucent.
- Season with kosher salt and black pepper the shrimp.
- Add the shrimp into the skillet and cook for about 3 minutes on both sides.
- Remove the shrimp from the skillet and place them onto a clean plate.
- In the same skillet, add wine and lemon juice. Make sure to scrape the bottom to get the brown bits, then allow the mixture to boil.
- Add 2 tablespoons of butter and allow it to melt, then 2 tablespoons of olive oil.
- Add the cooked linguine, parsley, and shrimp into the skillet, then bring it to a simmer.
- Serve and enjoy!
